This Ain't Your Boring White Rice| Fresh Cilantro-Lime Rice Recipe

I love rice, the same way Oprah loves bread. Actually, I love bread too! I am the kind of person that eats rice at least 3 time a week, sometimes 7 days a week. I love it and I grew up eating it. As a Ghanian, rice is a stable to our diet. So, it is natural that I would find different ways to consume rice. 

This recipe is a spin off of Chipotle's cilantro lime rice.  But, I have made it easy and added a bit of kick to it. 


1 Cup of Parboiled Rice (You can use white rice, wild rice, or brown rice.) 

2 Tablespoon of Olive Oil

1 Lime 

Cilantro (Use as much as you like) 

1/2 Teaspoon of Chilli Pepper Flakes 

Salt (To Taste)


Cook the rice by following the directions on the box or bag it came in. Once that is done, take it off the stove and let it rest for a five minutes. Cut your lime in half and squeeze it onto the rice, chop the cilantro, add it to the rice, add your olive oil, the pepper flakes, and salt. Stir until everything is mixed in well. Taste it and add extra lime juice, oil, salt, or pepper if you desire it!
